Despite common sense suggesting that eating a balanced diet high in vegetables will reduce the risk of developing type 2 diabetes, studies on this topic have yielded mixed results. Possibly identifying the cause, scientists from Edith Cowan University (ECU) in Perth, Australia, have published their findings in the journal Diabetes Care.Vegetables, with the notable exception of potatoes, frequently included in the research as vegetables, were found to lessen the chance of developing diabetes.
